Savor the Flavor Unveiling the Secrets of Argentinean Asado

Argentinean Asado is a traditional barbecue style from Argentina known for its slow-cooked, flavorful meats.

Ingredients:

- A variety of (beef cuts), (including ribeye), (skirt steak), (flank steak), and short ribs

- Salt, ideally coarse salt

- The Pepper

- Chimichurri sauce is optional; see recipe below.

Instructions:

1. Light the charcoal or wood that has been piled up for the grill. Let the fire burn down until only heated embers remain. For slow cooking, a medium-low heat is preferred.

2. Liberally sprinkle salt and pepper on both sides of the meats. Applying the salt right before grilling will prevent the meat from losing moisture.

3. After turning on the grill, arrange the meats on the grates, starting with the thicker cuts first, such as short ribs or ribeye, and then adding the thinner cuts, such as flank or skirt steak.

4. Cook the meats slowly for 30 to 40 minutes or to the desired degree of doneness, flipping them occasionally. Asado is often cooked to medium or medium-rare in Argentina.

5. Give them a moment to rest before serving.

6. Arrange the meats as the focal point of a meal on a sizable dish or cutting board. Offer extra salt and chimichurri sauce on the side for visitors to add as they choose.
