Homemade Green Tomato Pickles, Spicy Green Tomato Chutney, and Green Tomato Relish

Green Tomato Relish is a delicious condiment made from unripe green tomatoes. It's a great way to use up those green tomatoes from your garden or to add a tangy and sweet flavor to various dishes. Here's a simple recipe to make your own green tomato relish:

Ingredients:

- 4 cups green tomatoes, finely chopped

- 2 cups onions, finely chopped

- 1 cup bell peppers (green, red, or a mix), finely chopped

- 1 1/2 cups white vinegar

- 1 1/2 cups granulated sugar

- 1 tablespoon pickling salt (or non-iodized salt)

- 1 teaspoon mustard seeds

- 1 teaspoon celery seeds

- 1/2 teaspoon ground turmeric

- 1/2 teaspoon ground cinnamon

- 1/2 teaspoon ground allspice

- 1/4 teaspoon ground cloves

Instructions:

1. Prepare the tomatoes, onions, and bell peppers by washing them thoroughly and finely chopping them. You can use a food processor to make this process quicker and easier.

2. In a large pot, combine the chopped tomatoes, onions, and bell peppers.

3. Add the white vinegar, sugar, and pickling salt to the pot with the vegetables. Stir well to combine.

4. Place the pot over medium-high heat and bring the mixture to a boil. Once it starts boiling, reduce the heat to medium-low and let it simmer for about 30 minutes. Stir occasionally to prevent sticking and ensure even cooking.

5. While the mixture is simmering, tie the mustard seeds, celery seeds, ground turmeric, ground cinnamon, ground allspice, and ground cloves in a small piece of cheesecloth to create a spice bag.

6. Add the spice bag to the pot with the vegetables. This will infuse the relish with the flavors of the spices without leaving any residue in the final product.

7. Continue simmering the mixture for an additional 15 to 20 minutes until it thickens and reaches the desired consistency. The vegetables should be soft, and the liquid should be reduced.

8. Remove the pot from the heat and discard the spice bag.

9. Carefully transfer the hot relish into clean, sterilized jars. Leave about 1/4-inch of headspace at the top of each jar.

10. Wipe the jar rims clean, place the lids on the jars, and screw on the bands securely.

11. Process the jars in a boiling water bath for 10 minutes to ensure proper preservation. Make sure the jars are completely covered with water during the process.

12. Remove the jars from the water bath and let them cool at room temperature. As they cool, you should hear a "pop" sound, indicating that the jars have been properly sealed.

Your homemade green tomato relish is now ready to use! It can be served as a condiment for burgers, hot dogs, sandwiches, or grilled meats. Store any unopened jars in a cool, dark place for up to a year. Once opened, keep the relish in the refrigerator and use it within a few weeks. Enjoy!
