The delectable chimichurri sauce, a brilliant green condiment with Argentinian origins, is frequently used as a marinade or topping for grilled meats like chicken, cattle, or hog. 

 Here is a straightforward recipe for chicken with chimichurri sauce:

Ingredients:

  • Applied to the chimichurri sauce:
  • 1 cup of packed fresh parsley leaves
  • 1/2 cup packed fresh cilantro leaves
  • 3–4 garlic cloves
  • Red wine vinegar 1/4 cup 
  • 1/2 cup extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (modify the amount of heat to your taste)
  • Salt: 1/2 teaspoon (adjust to taste)
  • One-fourth teaspoon black pepper

The chicken:

  • 4 boneless, skinless chicken breasts (chicken thighs are also an option).
  • To taste, salt and pepper
  • Chicken brushed with olive oil

Instructions:

1. First, prepare the chimichurri sauce. In a food processor or blender, combine the parsley, cilantro, garlic, red wine vinegar, red pepper flakes, salt, and black pepper. To finely chop the herbs, continue to pulse.

2. Slowly add the olive oil while the processor is running until the sauce is thoroughly mixed and emulsified. If necessary, taste and adjust the seasoning. If the tanginess of the sauce is too strong for you, you can increase the amount of olive oil in the mixture.

3. Spoon the chimichurri sauce into a bowl, then reserve it. Although fresh is preferred, you can store any sauce leftovers in the fridge for one or two days.

4. Your grill or grill pan should be very hot.. On both sides, season the chicken breasts with salt and pepper.

5. To avoid sticking and to help create attractive grill markings, lightly brush a little olive oil on both sides of the chicken breasts.

6. Grill the chicken breasts for 5 to 6 minutes on each side, Cooking times may vary based on the thickness of the chicken breasts.

7. To add flavor during the last few minutes of cooking, spread some chimichurri sauce over each chicken breast. Set aside some sauce to serve.

8. Take the chicken off the grill once it is well cooked and place it aside to rest.

9. Drizzle some of the remaining chimichurri sauce on top of the cooked chicken before serving. It goes incredibly well with sides like rice, grilled veggies, or a crisp salad.
